Punchy flavors of apricot, kumquat, blood orange and tangerine in a crisp zesty wine. As always, our rosé is fermented bone dry in Southern French style. We farm this cabernet franc vineyard in a cooler zone of Napa Valley specifically for rosé, harvesting at 22-23brix--that's much earlier than sweeter, fully-ripened fruit grown to produce a rich dark red wine. We don't want dark fruit flavors in rosé! So we do NOT saignee the red tank to produce this wine. The early harvest--like with sparkling wines--preserves natural acidity and the bright orange-pink fruit character we love in fresh dry rosé. After crushing, grapes are macerated a few hours to extract a smidge of color and aromatic nuance from the skins before lightly pressing and fermenting the clear juice completely dry in stainless steel. To round out the flavor and allow the wines to develop character over a few years, we relentlessly stir over a few months while aging on lees. This level of handwork is a costly labor of love! Virage Rosé fans will find this vintage very similar to 2012 and 2014 in weight and flavor intensity. We picked wee riper than the delicate 2015 vintage. Think tangerine and apricot vs the sheer minerality of 2015. So easy to pair--always a hit with hors d'eourves, anything with prosciutto! Sushi, pizza, pasta, anything with spicy sausage! Asian food, yes. Solid dinner companion to butternut squash soup, baked salmon, herb-roasted chicken. Pork grilled, roasted, stews... any way you like it... can't miss with Pink n Pork.
